Ingredients Required
- 2 lbs of chanterelle mushrooms (slice large ones, keep little ones whole)
- 1/2 of a yellow onion
- 1 cloves of minced garlic
- 1 Poblano Pepper (or chipotle pepper)
- 1 tablespoon finely chopped cilantro
- 2 tablespoons soy sauce (lemon zest soy sauce works great)
- 1 ½ tablespoons sesame oil (or olive oil for a healthier option)
- 1 small handful of bean sprouts
- Want to add meat? Include .25 lbs of ground beef, pork, or chicken.
- 1 tablespoon of salt.
- 1 tablespoon of onion powder
- 1 Tablespoon of black pepper or hatch chili pepper.
- 1 Packet or One Cup of White Rice
Cooking Instructions:
- Chop all of the vegetables into smaller pieces. The garlic, however, should be chopped finely
- Put your chanterelles separately to the side.
- If you don’t have precooked rice, now is a good time to start the rice.
- Heat your pan to high heat with no oil.
- Once hot, throw on the chanterelles for 45 seconds. You’ll want the water content to steam away before adding anything else
- At this point, add all of the oil you have prepared.
- Toss in the rest of the vegetables and put the cover on the pan. Mix everything up and let it cook for 1-2 minutes.
- Then, add your seasonings into the pan and make sure it is mixed up well amongst your ingredients
- let it cook for 45 more seconds
- Turn off the pan, and move the stir-fried vegetables & chanterelles to a large bowl.
- Drizzle some soy sauce over the top, and add to rice.
- Thats it! Enjoy!
