Black Trumpet mushrooms can be difficult to find, but are worth that extra effort for their delectable texture & umami, buttery taste. While there are many applications for this wild delight, we believe that they go best with subtle asian flavors, and we think you’ll agree. These dumplings are to die for, and we can’t wait for you to try them!

I’ve always loved dumplings. Black Trumpet is that element I never knew I needed, but now can’t go without.


Black Trumpet Dumpling Recipe

Ingredients Required

  1. 1/2 pound of finely chopped fresh black trumpet mushrooms (or reconstituted dried mushrooms)
  2. 1 pound ground pork, chicken, or lamb
  3. 3 cloves of minced garlic
  4. 1 large egg, beaten (pasture raised is best)
  5. 2 tablespoons finely chopped chives
  6. 2 tablespoons soy sauce (lemon zest soy sauce works great)
  7. 1 ½ tablespoons sesame oil
  8. 1 tablespoon minced fresh ginger root
  9. 50 dumpling wraps (a quick google search should help you find some. Or, just go to wholefoods)
  10. ½ cup vegetable oil for frying, or as preferred

Cooking Instructions:

  1. Prepare dumpling mix: Mix meat, mushrooms, garlic, egg, chives, soy sauce, sesame oil, and ginger in a large bowl until thoroughly combined.
  2. Place a dumpling wrapper on a flat surface and add one tablespoon of the filling into the center. If your wraps are sticking to the surface, gently sprinkle down some flour before beginning.
  3. Wet the edge with a little warm water and pinch together the edges, forming small pleats to seal the dumpling. Do this again with all of the dumpling wraps.
  4. Heat 1 to 2 tablespoons vegetable oil in a large skillet over medium-high heat. Place 7 to 10 dumplings in the pan and cook until golden-brown, about 2 minutes per side
  5. Pour in 1 cup of unsalted water; cover and cook until the dumplings are tender and meat is cooked through, about 5 minutes
  6. Repeat to cook remaining dumplings, adding more oil and water for each batch.
  7. Serve dumplings with dipping sauce of your choice.
